1 pound large sea scallops (fresh or thawed if frozen)
1/2 cup grated Parmesan cheese, preferably aged for a richer flavor
1/4 cup breadcrumbs (panko works best for extra crunch)
2 tablespoons melted butter or olive oil
1 teaspoon garlic powder
1 teaspoon paprika for a touch of warmth
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Instructions
Rinse the scallops under cold water and pat them dry with paper towels. Ensure they are very dry, as moisture will prevent a good crust from forming. Season them lightly with salt and pepper.
In a medium-sized mixing bowl, combine the grated Parmesan cheese, breadcrumbs, garlic powder, paprika, and melted butter or olive oil. Mix well until the ingredients are evenly distributed.
Take each scallop and dip it into the cheese mixture, pressing lightly to ensure that the toppings adhere well.
Set your air fryer to 400°F (200°C) and preheat for about 5 minutes.
Arrange the coated scallops in a single layer in the air fryer basket and cook for 8-10 minutes, flipping halfway through.
