2 cups of all-purpose flour
1 cup of unsalted butter, softened
8 oz of cream cheese, softened
1/3 cup of granulated sugar
1 teaspoon of vanilla extract
1 cup of apricot jam
1 egg yolk (for egg wash)
Powdered sugar (for dusting)
Instructions
In a mixing bowl, cream together the softened butter and cream cheese until smooth. Gradually add the granulated sugar and vanilla extract, mixing well. Slowly incorporate the all-purpose flour until just combined. Wrap the dough in plastic wrap and refrigerate for at least 2 hours.
After chilling the dough, preheat your oven to 350°F (175°C). On a floured surface, roll out the dough to about 1/8-inch thickness. Use a round cutter (about 2-3 inches in diameter) to cut out circles of dough.
Place a teaspoon of apricot jam in the center of each dough circle. Fold the sides of the circle over the filling and pinch to seal, creating a small pocket. Arrange the filled cookies on a parchment-lined baking sheet.
Beat the egg yolk in a small bowl and brush it over the tops of the cookies to give them a beautiful golden color when baked.
Bake for 20-25 minutes or until the edges are lightly golden. Allow the cookies to cool on a rack before dusting them with powdered sugar.
