Ingredients

  • 4 cups napa cabbage, finely shredded
  • 2 cups carrots, julienned
  • 1 red bell pepper, thinly sliced
  • 1 cup edamame, shelled and cooked
  • ÂĽ cup scallions, chopped
  • 1 cup chopped cilantro
  • 1 tablespoon sesame seeds
  • ½ cup sliced almonds
  • ÂĽ cup soy sauce or tamari
  • 2 tablespoons rice vinegar
  • 2 tablespoons sesame oil
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon grated ginger
  • 1 garlic clove, minced

  • Instructions

  • Wash all your vegetables thoroughly. Finely shred the napa cabbage and julienne the carrots. Slice the red bell pepper, and chop the scallions and cilantro.
  • If using frozen edamame, cook according to package instructions, usually boiling for about 5 minutes. Drain, rinse with cold water, and let cool.
  • In a large bowl, combine napa cabbage, carrots, bell pepper, edamame, scallions, and cilantro. Toss gently to mix.
  • In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, honey, grated ginger, and minced garlic. Adjust for taste.
  • Pour the dressing over the salad and toss until coated. Let sit for 5 minutes before serving.
  • Top with sesame seeds and sliced almonds, give a final toss, and serve.
