4 cups napa cabbage, finely shredded
2 cups carrots, julienned
1 red bell pepper, thinly sliced
1 cup edamame, shelled and cooked
ÂĽ cup scallions, chopped
1 cup chopped cilantro
1 tablespoon sesame seeds
½ cup sliced almonds
ÂĽ cup soy sauce or tamari
2 tablespoons rice vinegar
2 tablespoons sesame oil
1 tablespoon honey or maple syrup
1 teaspoon grated ginger
1 garlic clove, minced
Instructions
Wash all your vegetables thoroughly. Finely shred the napa cabbage and julienne the carrots. Slice the red bell pepper, and chop the scallions and cilantro.
If using frozen edamame, cook according to package instructions, usually boiling for about 5 minutes. Drain, rinse with cold water, and let cool.
In a large bowl, combine napa cabbage, carrots, bell pepper, edamame, scallions, and cilantro. Toss gently to mix.
In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, honey, grated ginger, and minced garlic. Adjust for taste.
Pour the dressing over the salad and toss until coated. Let sit for 5 minutes before serving.
Top with sesame seeds and sliced almonds, give a final toss, and serve.
