  • Salt and black pepper, to taste
  • Cooking spray or olive oil for drizzling
  • 1 cup plain Greek yogurt for the dip
  • 1 tablespoon lemon juice
  • 2 tablespoons chopped fresh dill or parsley
  • Salt, to taste

  • Instructions

  • Preheat your oven to 425°F (220°C).
  • Slice the zucchinis into fry shapes, aiming for uniformity. Pat them dry using a clean kitchen towel.
  • In one bowl, beat the eggs. In another bowl, mix the breadcrumbs, Parmesan cheese, garlic powder, onion powder, salt, and pepper.
  • Take each zucchini slice, dip it in the egg wash, then coat it in the breadcrumb mixture. Place them on a baking sheet lined with parchment paper.
  • Spray the top of the fries lightly with cooking spray or drizzle with olive oil. Bake for about 15 minutes or until golden brown, flipping halfway through.
