4 medium zucchinis, sliced into fry shapes
1 cup breadcrumbs (panko for extra crunch!)
1/2 cup grated Parmesan cheese
2 large eggs
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and black pepper, to taste
Cooking spray or olive oil for drizzling
1 cup plain Greek yogurt for the dip
1 tablespoon lemon juice
2 tablespoons chopped fresh dill or parsley

Instructions
Preheat your oven to 425°F (220°C).
Slice the zucchinis into fry shapes, aiming for uniformity. Pat them dry using a clean kitchen towel.
In one bowl, beat the eggs. In another bowl, mix the breadcrumbs, Parmesan cheese, garlic powder, onion powder, salt, and pepper.
Take each zucchini slice, dip it in the egg wash, then coat it in the breadcrumb mixture. Place them on a baking sheet lined with parchment paper.
Spray the top of the fries lightly with cooking spray or drizzle with olive oil. Bake for about 15 minutes or until golden brown, flipping halfway through.
While the fries are baking, mix the Greek yogurt, lemon juice, chopped dill or parsley, and salt in a small bowl.
