  • 2 ripe bananas, mashed
  • 1 cup banana pudding mix
  • 2 cups milk
  • 1 cup whipped cream (for topping)

  • Instructions

  • Preheat your oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs with melted butter and 1/4 cup sugar. Press this mixture into the bottom of a greased 9-inch springform pan. Bake for about 10 minutes until golden, then let it cool.
  • In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the remaining sugar and beat until creamy.
  • Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, mashed bananas, and banana pudding mix until fully incorporated.
  • Pour the cheesecake mixture over the cooled crust in the springform pan and smooth out the top with a spatula.
  • Bake in the preheated oven for approximately 55 minutes, or until the edges are set and the center is slightly jiggly. Let it cool on a wire rack for around 30 minutes.
  • Cover cheesecake with plastic wrap and refrigerate for at least an hour, or ideally overnight.
