Instructions
Start by preparing the pickled carrots and daikon. In a small bowl, mix equal parts vinegar, sugar, and water. Heat until the sugar dissolves, then pour it over the chopped vegetables. Let them sit for at least 30 minutes.
Form the ground beef into four equal balls (about 4 ounces each). Don’t compact them too much; you want them to remain tender. Season each ball generously with salt and pepper.
Heat a cast-iron skillet or griddle over high heat until very hot. Place the beef balls in the pan, then use a spatula to smash each ball flat. Cook for about 2-3 minutes on one side until a crust forms, then flip and cook for another minute.
While the burgers are cooking, slice the buns in half and toast them in a separate pan or under the broiler until golden brown.
Start with the bottom bun, add the smashed beef patty, then layer on the pickled vegetables, cucumbers, fresh cilantro, and a drizzle of sriracha mayo. Top with the bun and prepare for an explosion of flavor.
