1 pound ground beef (or ground turkey for a leaner option)
1 medium onion, diced
2 cloves garlic, minced
1 can (15 oz) black beans, drained and rinsed
1 can (10 oz) diced tomatoes with green chilies
1 can (10 oz) enchilada sauce (red or green)
1 cup corn (frozen or canned)
1 teaspoon chili powder
1 teaspoon cumin
2 cups shredded cheese (cheddar, Monterey Jack, or Mexican blend)
1 cup tortilla chips (optional for crunch)
Fresh cilantro or green onions for garnish
Instructions
Brown the Beef: In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula as it cooks, around 5-7 minutes.
Sauté Onions & Garlic: Once the beef is browned, add the diced onion and minced garlic to the skillet. Sauté until the onion becomes translucent, around 3-4 minutes.
Combine the Ingredients: Add black beans, diced tomatoes with green chilies, enchilada sauce, corn, chili powder, and cumin. Stir to combine and let simmer for 5 minutes.
Add the Cheese: Sprinkle half of your shredded cheese over the top, cover the skillet and simmer for 3-5 minutes until the cheese is melted.
Garnish and Serve: Remove from heat, sprinkle the remaining cheese on top, add crushed tortilla chips if desired, and garnish with fresh cilantro or green onions.
