  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 can (10 oz) enchilada sauce (red or green)
  • 1 cup corn (frozen or canned)
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 2 cups shredded cheese (cheddar, Monterey Jack, or Mexican blend)
  • 1 cup tortilla chips (optional for crunch)
  • Fresh cilantro or green onions for garnish

  • Instructions

  • Brown the Beef: In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula as it cooks, around 5-7 minutes.
  • Sauté Onions & Garlic: Once the beef is browned, add the diced onion and minced garlic to the skillet. Sauté until the onion becomes translucent, around 3-4 minutes.
  • Combine the Ingredients: Add black beans, diced tomatoes with green chilies, enchilada sauce, corn, chili powder, and cumin. Stir to combine and let simmer for 5 minutes.
  • Add the Cheese: Sprinkle half of your shredded cheese over the top, cover the skillet and simmer for 3-5 minutes until the cheese is melted.
  • Garnish and Serve: Remove from heat, sprinkle the remaining cheese on top, add crushed tortilla chips if desired, and garnish with fresh cilantro or green onions.
