  • 350 grams of water
  • 100 grams of active sourdough starter
  • 10 grams of salt

  • Instructions

  • In a large mixing bowl, combine the flour, water, and bubbly sourdough starter. Mix until no dry flour remains. Let the mixture rest for about 30 minutes.
  • After resting, sprinkle the salt over the dough. Wet your hands and start folding the dough onto itself to integrate the salt for about 3-4 minutes.
  • Cover the bowl with a damp cloth and let it ferment in a warm place for 6 to 12 hours.
  • Flour your work surface and gently dump the dough out. Shape it into a round loaf and let it rest for about 30 minutes.
  • Perform a final shaping by cupping your hands around the dough and twisting to create surface tension. Place the loaf seam-side up in a proofing basket or bowl.
  • Let the loaf rise for about 1 to 2 hours at room temperature or in the refrigerator overnight.
  • Preheat your oven to 450°F (230°C) with a Dutch oven inside. Score the top of the bread and place it in the hot Dutch oven. Bake for 30 minutes covered, then 10 minutes uncovered.
  • Transfer the bread onto a wire rack to cool for at least 30 minutes before slicing.
