2 medium zucchinis, grated
1/2 cup almond flour
2 large eggs
1/2 cup grated Parmesan cheese
1/4 cup finely chopped green onions or chives
1 teaspoon garlic powder or 2 cloves minced garlic
1/2 teaspoon salt
1/4 teaspoon black pepper
Olive oil or coconut oil for frying
Instructions
Wash the zucchinis thoroughly and grate them using a box grater or food processor. Squeeze out excess moisture using a clean kitchen towel.
In a large mixing bowl, combine grated zucchini, almond flour, eggs, Parmesan cheese, green onions, garlic powder, salt, and pepper. Mix until well incorporated.
Heat about 2 tablespoons of olive or coconut oil in a large skillet over medium heat until hot but not smoking.
Using a 1/4 cup measuring cup, scoop portions of the zucchini mixture and place them in the hot oil, flattening with a spatula. Cook for 3-4 minutes on each side until golden brown.
Transfer cooked fritters onto a paper towel-lined plate to drain excess oil and let cool for a couple of minutes before serving.
