Description
Savor summer with this irresistible bourbon peach icebox cake recipe A perfect blend of flavors for warm days and delightful gatherings
Ingredients
Scale
1 cup heavy cream (can substitute with coconut cream for a dairy-free option)
½ cup powdered sugar
½ cup bourbon
3 cups fresh peaches, sliced (frozen peaches can work in a pinch, though fresh is preferred for texture)
2 cups graham cracker crumbs (or use crushed Oreos for a twist)
1 teaspoon vanilla extract
Pinch of salt
Instructions
In a large mixing bowl, whip the heavy cream with powdered sugar, vanilla extract, and a pinch of salt until stiff peaks form.
In another bowl, combine the sliced peaches with bourbon, mixing gently to let the flavors meld. Allow them to marinate for about 10-15 minutes.
In a 9×13 inch baking dish, start layering the ingredients. Begin with a layer of graham cracker crumbs, followed by a layer of whipped cream mixture, then a layer of bourbon-soaked peaches. Repeat layers until the dish is full, finishing with a layer of whipped cream and a few peach slices for garnish.
Cover the baking dish with plastic wrap and refrigerate for at least 4 hours or overnight.
Once chilled, cut into squares and serve. Consider garnishing with additional peach slices and a sprinkle of graham crackers.
