2 pounds of sausage (Andouille or kielbasa)
4 large ears of corn, husked and cut into thirds
2 pounds of small potatoes (Yukon Gold or red potatoes)
8 cups of water
1/4 cup of Cajun seasoning
2 tablespoons of Old Bay seasoning
1 lemon, halved
1/4 cup of unsalted butter
Salt and pepper to taste
Instructions
Start by washing the potatoes and corn thoroughly. Cut the corn into thirds, then set all ingredients aside.
In a large stockpot, bring 8 cups of water to a rolling boil. Add the potatoes and season well with salt and the Old Bay seasoning. Allow them to boil for about 10-15 minutes or until they are tender.
Once the potatoes have softened, slice the sausage into bite-sized pieces and add it to the pot. Allow the sausage to cook alongside the potatoes for about 10 minutes.
Add the corn pieces to the pot and boil all ingredients together for an additional 5-7 minutes.
Once everything is cooked, squeeze in the juice from the halved lemon and add the butter, stirring gently.
Drain the cooking liquid and serve directly onto a large table or platters.
