Ingredients

  • 2 pounds of sausage (Andouille or kielbasa)
  • 4 large ears of corn, husked and cut into thirds
  • 2 pounds of small potatoes (Yukon Gold or red potatoes)
  • 8 cups of water
  • 1/4 cup of Cajun seasoning
  • 2 tablespoons of Old Bay seasoning
  • 1 lemon, halved
  • 1/4 cup of unsalted butter
  • Salt and pepper to taste

  • Instructions

  • Start by washing the potatoes and corn thoroughly. Cut the corn into thirds, then set all ingredients aside.
  • In a large stockpot, bring 8 cups of water to a rolling boil. Add the potatoes and season well with salt and the Old Bay seasoning. Allow them to boil for about 10-15 minutes or until they are tender.
  • Once the potatoes have softened, slice the sausage into bite-sized pieces and add it to the pot. Allow the sausage to cook alongside the potatoes for about 10 minutes.
  • Add the corn pieces to the pot and boil all ingredients together for an additional 5-7 minutes.
  • Once everything is cooked, squeeze in the juice from the halved lemon and add the butter, stirring gently.
  • Drain the cooking liquid and serve directly onto a large table or platters.
