1 lb large shrimp, peeled and deveined
1 cup long-grain rice
2 cups chicken broth
1 medium onion, diced
1 bell pepper, chopped
3 cloves garlic, minced
1 tablespoon Cajun seasoning
1 tablespoon olive oil
Salt and pepper to taste
Optional garnishes: chopped green onions and fresh parsley
Instructions
In a large skillet, heat the olive oil over medium heat. Add the diced onions and bell peppers. Sauté for about 3-4 minutes, or until they begin to soften.
Stir in the minced garlic and Cajun seasoning, cooking for an additional 1-2 minutes.
Add the rice to the skillet. Stir well to coat the rice with the aromatic mixture and allow it to absorb the flavors for about 2 minutes.
Slowly pour in the chicken broth and bring to a gentle boil. Lower the heat to a simmer and cover the skillet. Let it cook for about 15 minutes until the rice is tender and has absorbed most of the liquid.
Carefully fold in the shrimp. Cook for an additional 5 minutes, or until the shrimp are pink and cooked through.
Remove from heat and let the dish sit for 2-3 minutes before serving. Garnish with chopped green onions and parsley.
