3 ½ cups of all-purpose flour
1 packet of active dry yeast or 2 ¼ teaspoons
½ cup of granulated sugar
1 teaspoon of salt
1 teaspoon of cinnamon
½ cup of warm milk (not hot)
½ cup of unsalted butter (melted)
3 large eggs
16 oz of cream cheese (softened)
1 cup of powdered sugar
2 large eggs
2 teaspoons of vanilla extract
½ cup of sour cream (optional)
1 cup of powdered sugar (for glaze)
2–3 tablespoons of milk (for glaze)
Food coloring (yellow, green, and purple)
Instructions
In a large bowl, combine warm milk with the yeast and a teaspoon of sugar. Allow to sit for about 5-10 minutes until foamy. Stir in melted butter, eggs, sugars, and salt. Gradually fold in flour and cinnamon to create a soft dough. Knead on a floured surface for about 5-7 minutes.
Place the dough in a lightly greased bowl, cover it with plastic wrap or a damp towel, and let it rise in a warm place until doubled in size, approximately 1 hour.
In a medium bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add powdered sugar, mixing thoroughly. Add eggs and vanilla extract, beating until fully combined. If desired, mix in sour cream for extra creaminess.
Preheat your oven to 350°F (175°C). When the dough has risen, punch it down and roll it into a large rectangle. Spread the cheesecake filling evenly over the dough. Carefully roll the dough lengthwise to encase the filling and pinch the ends to seal.
Turn the rolled dough into a circle on a greased baking sheet, creating a wreath shape. Cut slits along the top of the dough to allow it to expand while baking. Optionally, hide a small plastic baby inside for traditional fun. Cover the cake and let it rise for an additional 30 minutes.
Bake in your preheated oven for 30-35 minutes or until golden brown. Let it cool on a wire rack for at least 20 minutes before glazing.
