1 pound of ground beef
1 cup of long-grain rice
2 cups of beef broth
1 can (15 oz) of diced tomatoes with green chilies
2 cups of shredded cheese
1 small onion, diced
2 cloves of garlic, minced
1 tablespoon of chili powder
1 teaspoon of cumin
Salt and pepper to taste
Chopped green onions for garnish (optional)
Instructions
In a large skillet, over medium heat, brown the ground beef, breaking it into small pieces as it cooks. Season with salt, pepper, and chili powder for depth of flavor, about 5-7 minutes.
Add the diced onion and minced garlic to the skillet and cook until fragrant and the onion is translucent, about 3-4 minutes.
To the skillet, add the rice, beef broth, and can of diced tomatoes (with juices). Stir well while bringing to a boil.
