On one half of each tortilla, sprinkle a generous amount of shredded cheese, followed by the shrimp and vegetable mixture. Top with more cheese before folding the tortilla over the filling.
In the same skillet, add another tablespoon of oil and heat. Place the folded quesadillas in the skillet, cooking for about 3-4 minutes on each side until golden brown and crispy.
Remove the quesadillas from the skillet and let them cool for a minute. Cut into wedges and serve hot.
