  • 4 large flour tortillas

  • Instructions

  • Start by rinsing the shrimp under cold water and patting them dry with paper towels. Chop the bell peppers and onions into bite-sized pieces.
  • In a mixing bowl, combine the shrimp with Cajun seasoning, salt, and pepper.
  • In a large skillet, heat one tablespoon of olive oil over medium heat. Add the diced onions and bell peppers. Cook until tender, about 5 minutes.
  • Add the seasoned shrimp to the skillet with the sautéed vegetables. Cook for about 3-4 minutes until the shrimp turn pink and opaque.
  • On one half of each tortilla, sprinkle a generous amount of shredded cheese, followed by the shrimp and vegetable mixture. Top with more cheese before folding the tortilla over the filling.
  • In the same skillet, add another tablespoon of oil and heat. Place the folded quesadillas in the skillet, cooking for about 3-4 minutes on each side until golden brown and crispy.
  • Remove the quesadillas from the skillet and let them cool for a minute. Cut into wedges and serve hot.
