1 pound of large shrimp, peeled and deveined
1 cup of shredded Monterey Jack cheese
1 cup of bell peppers (red, green, or yellow)
½ cup of diced onions
2 teaspoons of Cajun seasoning
4 large flour tortillas
2 tablespoons of olive oil or butter for cooking
Salt and pepper to taste
Optional toppings: sour cream, guacamole, or salsa to serve
Instructions
Start by rinsing the shrimp under cold water and patting them dry with paper towels. Chop the bell peppers and onions into bite-sized pieces.
In a mixing bowl, combine the shrimp with Cajun seasoning, salt, and pepper.
In a large skillet, heat one tablespoon of olive oil over medium heat. Add the diced onions and bell peppers. Cook until tender, about 5 minutes.
Add the seasoned shrimp to the skillet with the sautéed vegetables. Cook for about 3-4 minutes until the shrimp turn pink and opaque.
On one half of each tortilla, sprinkle a generous amount of shredded cheese, followed by the shrimp and vegetable mixture. Top with more cheese before folding the tortilla over the filling.
In the same skillet, add another tablespoon of oil and heat. Place the folded quesadillas in the skillet, cooking for about 3-4 minutes on each side until golden brown and crispy.
Remove the quesadillas from the skillet and let them cool for a minute. Cut into wedges and serve hot.
