16 large jumbo pasta shells
2 cups cooked chicken, shredded
2 cups broccoli florets, steamed and chopped
1 ½ cups ricotta cheese
1 cup shredded mozzarella cheese, plus extra for topping
½ cup grated Parmesan cheese
1 egg, beaten
2 cups marinara sauce
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
Fresh parsley for garnish (optional)
Instructions
Preheat your oven to 375°F (190°C). Boil a large pot of salted water and cook the jumbo pasta shells until al dente, about 8-10 minutes. Drain and set aside.
In a large bowl, mix together shredded chicken, steamed broccoli, ricotta, mozzarella, Parmesan, beaten egg, garlic powder, onion powder, salt, and pepper.
Fill each cooked shell with the chicken and broccoli mixture and arrange in a baking dish.
Pour marinara sauce over the stuffed shells and top with additional mozzarella.
Cover with foil and bake for 25 minutes, then uncover and bake for an additional 15 minutes until cheese is bubbly and golden.
