½ cup chopped scallions (green onions)

Instructions
Prepare the Dough: Mix the all-purpose flour and salt in a large bowl. Pour in the boiling water gradually while stirring until it comes together. Cool for a few minutes and knead until smooth.
Rest the Dough: Cover the dough with a damp towel and let it rest for at least 20 minutes.
Roll Out the Dough: Divide the dough into four portions and roll each into a thin circle, about 10 inches in diameter.
Add Filling and Roll: Brush a light layer of sesame oil on the rolled dough, sprinkle scallions on top, then roll tightly and coil into a spiral.
Flatten the Pancake: Gently flatten each spiral into a disc shape.
Fry the Pancakes: Heat a skillet over medium-high, add oil, and fry each pancake for 2-3 minutes on each side until golden brown.
