Ingredients
Scale
1 ciabatta or Italian hoagie roll (for a gluten-free option, use gluten-free bread)
4 oz sliced salami (try turkey salami for a lighter alternative)
4 oz sliced capicola (or pancetta for a different flavor profile)
4 oz provolone cheese (swap for mozzarella or vegan cheese)
1 cup chopped romaine lettuce (can substitute with baby spinach)
1 medium tomato, diced (heirloom tomatoes add a lovely flavor)
1/2 red onion, finely chopped (sweet onions work well too)
1/4 cup sundried tomatoes, chopped (fresh tomatoes can be substituted)
1/4 cup olives, pitted and sliced (green or black, your choice!)
2 tbsp Italian dressing or vinaigrette (homemade is always a hit)
Salt and pepper to taste
Instructions
Step 1: Prepare the Meat and Cheese – Start by gathering your salami, capicola, and provolone cheese. Layer them delicately on a cutting board, and then chop them into small, bite-sized pieces.
Step 2: Chop the Vegetables – Chop your romaine lettuce, tomato, red onion, and sundried tomatoes. Place them in a large mixing bowl.
Step 3: Combine Everything – In the mixing bowl with your chopped vegetables, add the meats and cheeses. Pour in the Italian dressing and toss everything together until evenly coated.
Step 4: Assemble the Sandwich – Slice your ciabatta or Italian hoagie roll in half and lay it open. Spoon the chopped mixture onto the bottom half and press down with the other half of the bread.
Step 5: Optional Grilling – If desired, grill the sandwich for about 2-3 minutes, until crispy and golden brown.
