Description

Savor the decadence of Classic Lobster Newburg This seafood delight features rich flavors and a creamy sauce perfect for any special occasion

Ingredients

Scale
  • 2 cups cooked lobster meat, chopped
  • 2 tablespoons unsalted butter
  • 1 medium onion, finely chopped
  • 1 cup heavy cream
  • 1 cup chicken or seafood stock
  • 3 tablespoons brandy
  • 3 large egg yolks
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

  • Instructions

  • If using live lobsters, boil them for about 8 to 10 minutes until they are bright red, then plunge into ice water. Once cooled, extract the meat and chop it into bite-sized pieces.
  • In a large skillet, melt the butter over medium heat. Add the chopped onion and sauté for 3-4 minutes until it becomes translucent.
  • Carefully pour in the brandy and let it simmer for 2 minutes.
  • Stir in the chicken or seafood stock, followed by the heavy cream. Allow the mixture to gently simmer for 10-15 minutes, stirring occasionally until it thickens.
  • Gently fold in the chopped lobster meat, Worcestershire sauce, and season with salt and pepper. Cook for another 5-7 minutes just until the lobster is heated through.
  • To temper the egg yolks, whisk them in a separate bowl and gradually add a spoonful of the hot lobster sauce to the yolks, mixing continuously. Then, pour the yolk mixture back into the skillet and stir well.
  • Remove from heat and let it cool for a moment. Serve your Lobster Newburg over buttered toast, in puff pastry shells, or on a bed of fluffy white rice, garnished with parsley.
