Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine the mashed bananas, cottage cheese, honey (or maple syrup), vegetable oil, eggs, and vanilla extract. Use a whisk to mix until smooth and creamy.
In another bowl, whisk together the whole wheat flour, baking powder, baking soda, salt, and cinnamon.
Gently fold the dry ingredients into the wet ingredients until just combined. If using walnuts or chocolate chips, fold them in now.
Pour the batter into a greased 9×5-inch loaf pan and bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.
Once baked, let the cake cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely before slicing.
