  • 8 oz (about 225 g) of rotini or fusilli pasta
  • 1 cup cooked crab meat (can substitute with shrimp or imitation crab)
  • 1 cup cherry tomatoes, halved
  • 1 cup sweet corn (frozen or fresh)
  • 1/2 cup red bell pepper, diced
  • 1/2 cup cucumbers, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup mayonnaise (Greek yogurt for a lighter alternative)
  • 2 tbsp lemon juice
  • 1 tsp Dijon mustard
  • Salt and pepper to taste
  • Fresh parsley for garnish

  • Instructions

  • Bring a large pot of salted water to a boil. Add in the pasta and cook according to the package instructions, usually around 8-10 minutes until al dente.
  • Chop the cherry tomatoes, red bell pepper, cucumbers, and red onion into bite-sized pieces.
  • In a separate bowl, whisk together the mayonnaise, lemon juice, Dijon mustard, salt, and pepper.
  • Once the pasta is cooked and drained, let it cool. In a large mixing bowl, combine the pasta, crab meat, vegetables, and the dressing. Toss gently.
  • Chill the salad in the refrigerator for about 30 minutes before serving.
