  • 1 lb shrimp, peeled and deveined

  • 1/2 cup chicken broth
  • 1 cup bell peppers (red, green, yellow), sliced
  • 1/2 cup diced onion
  • 3 cloves garlic, minced
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish

  • Instructions

  • Begin by bringing a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Drain and set aside, reserving about 1/2 cup of the pasta water.
  • In a large skillet, heat the olive oil over medium-high heat. Season the shrimp with Cajun seasoning, salt, and pepper. Cook for about 2-3 minutes on each side until they turn pink and opaque. Remove and set aside.
  • In the same skillet, add the diced onions and sauté them until soft, about 3-4 minutes. Add sliced bell peppers and cook for an additional 2-3 minutes. Add minced garlic and cook until fragrant, about 1 minute.
  • Pour in the chicken broth and simmer for about 2-3 minutes. Then pour in the heavy cream and stir well. Simmer again until it thickens. Add reserved pasta water to reach desired consistency if needed.
  • Return the shrimp to the skillet. Add the cooked pasta and toss everything together until well combined. Adjust seasoning if needed.
  • Plate the dish and garnish with fresh parsley or green onions for an artistic flair.
