  • 2 cups of uncooked long-grain rice
  • 1 lb boneless, skinless chicken breasts, diced
  • 8 oz fresh mushrooms, sliced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 tsp dried thyme
  • 1 tsp paprika
  • Salt and pepper, to taste
  • 1 cup grated cheese

  • Instructions

  • Preheat your oven to 350°F (175°C).
  • In a large skillet over medium heat, add a splash of olive oil. Once hot, add the diced chicken, seasoned with salt and pepper. Cook until browned, about 5 minutes.
  • Add chopped onions and minced garlic to the skillet. Sauté for another 2-3 minutes, then add sliced mushrooms. Cook until mushrooms are soft.
  • Transfer the sautéed mixture into a large mixing bowl. Stir in the uncooked rice, dried thyme, and paprika.
  • Pour in the chicken broth and heavy cream, mixing well until every grain of rice is coated.
  • Pour the entire mixture into a greased 9×13 inch baking dish, spreading it out evenly.
  • Sprinkle grated cheese over the top.
  • Cover with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 20-30 minutes until the rice is tender and cheese is bubbly.
