2 cups of uncooked long-grain rice
1 lb boneless, skinless chicken breasts, diced
8 oz fresh mushrooms, sliced
1 medium onion, chopped
3 cloves garlic, minced
4 cups low-sodium chicken broth
1 cup heavy cream
1 tsp dried thyme
1 tsp paprika
Salt and pepper, to taste
1 cup grated cheese
Instructions
Preheat your oven to 350°F (175°C).
In a large skillet over medium heat, add a splash of olive oil. Once hot, add the diced chicken, seasoned with salt and pepper. Cook until browned, about 5 minutes.
Add chopped onions and minced garlic to the skillet. Sauté for another 2-3 minutes, then add sliced mushrooms. Cook until mushrooms are soft.
Transfer the sautéed mixture into a large mixing bowl. Stir in the uncooked rice, dried thyme, and paprika.
Pour in the chicken broth and heavy cream, mixing well until every grain of rice is coated.
Pour the entire mixture into a greased 9×13 inch baking dish, spreading it out evenly.
Sprinkle grated cheese over the top.
Cover with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 20-30 minutes until the rice is tender and cheese is bubbly.
