- 1 pound chicken breast, diced
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1/4 cup vodka
- 1 cup heavy cream
- 1 cup crushed tomatoes
- Salt and pepper to taste
- 1/2 teaspoon red pepper flakes
- 1/4 cup grated Parmesan cheese
- Fresh basil leaves for garnish
Instructions
- Start by boiling a large pot of salted water. Once bubbling, add the penne pasta and cook according to package instructions until al dente. Drain and reserve a cup of pasta water for later.
- In a large skillet, heat two tablespoons of olive oil over medium heat. Add the diced chicken and season with salt and pepper. Sauté until the chicken is cooked through, approximately 5-7 minutes. Remove from the skillet and set aside.
- In the same skillet, add the chopped onion and sauté until translucent, around 3-4 minutes. Introduce the minced garlic and cook for an additional minute until fragrant.
- Carefully pour the vodka into the skillet. Let it simmer for 2-3 minutes to cook off some alcohol, stirring occasionally.
- Next, stir in the crushed tomatoes, followed by the heavy cream. Mix well, allowing the sauce to reach a gentle simmer. Reduce the heat to low and add red pepper flakes to taste.
- Return the cooked chicken to the skillet along with the drained penne. Toss to combine, adding a bit of reserved pasta water if the sauce appears too thick.
- Plate the penne alla vodka with chicken, garnishing with freshly grated Parmesan cheese and torn basil leaves. Enjoy!
