4 boneless, skinless chicken breasts
1 tablespoon olive oil
3 tablespoons unsalted butter
6 cloves garlic, minced
1 cup chicken broth
1 cup heavy cream
1 teaspoon dried basil
1 teaspoon dried oregano
Salt and pepper to taste
Fresh parsley, chopped
Optional: 1/2 cup grated Parmesan cheese
Instructions
Pat the chicken breasts dry with paper towels. Season both sides generously with salt and pepper.
In a large skillet, heat the olive oil over medium-high heat. Once shimmering, add the chicken breasts. Sear for about 6-7 minutes per side, until the internal temperature reaches 165°F. Set the chicken aside on a plate.
Lower the heat to medium and add the butter to the same skillet. Once melted, stir in the minced garlic and sauté for 1-2 minutes until fragrant.
Pour in the chicken broth and scrape up any brown bits from the skillet. Let it simmer for about 3 minutes before stirring in the heavy cream, dried basil, and oregano. Allow the sauce to thicken for an additional 4-5 minutes.
Return the chicken to the skillet, spooning the sauce over each piece. Simmer for an additional 2-3 minutes.
Remove from heat, garnish with fresh parsley, and serve hot.
