1 pound of shrimp, peeled and deveined
1 cup of jasmine rice
1 cup of chicken or vegetable broth
1 cup of heavy cream
4 cloves of garlic, minced
1 small onion, finely chopped
2 tablespoons of olive oil
1 teaspoon of paprika
Salt and pepper, to taste
Fresh parsley, chopped for garnish
Instructions
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, stirring until the onion is translucent, about 3-4 minutes.
Add the shrimp to the skillet. Season with paprika, salt, and pepper. Cook until the shrimp are pink and opaque, around 3-5 minutes, then remove from the skillet.
In the same skillet, add the jasmine rice, stirring for about 1 minute. Pour in the chicken or vegetable broth, bring to a boil, then reduce heat to simmer and cover for about 15 minutes.
Once the rice is cooked, stir in the heavy cream and return the cooked shrimp to the skillet. Mix well over low heat for 2-3 minutes.
Garnish with fresh parsley and serve warm.
