  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup sun-dried tomatoes, chopped (jarred in oil for enhanced flavor)
  • 2 cups fresh spinach leaves
  • 1 cup heavy cream (substitute with coconut milk for a dairy-free option)
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish

  • Instructions

  • Heat the olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper, then add them to the pan. Sauté for about 6-7 minutes per side, or until cooked through and golden brown. Remove and set aside.
  • In the same skillet, add the chopped onion and sauté until translucent, about 3 minutes. Add the minced garlic and cook for an additional minute until fragrant.
  • Mix in the sun-dried tomatoes and stir for a minute. Then add the fresh spinach leaves, allowing them to wilt for about 2-3 minutes.
