4 boneless, skinless chicken breasts
2 tablespoons olive oil
1 medium onion, finely chopped
3 cloves garlic, minced
1 cup sun-dried tomatoes, chopped (jarred in oil for enhanced flavor)
2 cups fresh spinach leaves
1 cup heavy cream (substitute with coconut milk for a dairy-free option)
1 teaspoon Italian seasoning
Salt and pepper to taste
Fresh basil for garnish
Instructions
Heat the olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper, then add them to the pan. Sauté for about 6-7 minutes per side, or until cooked through and golden brown. Remove and set aside.
In the same skillet, add the chopped onion and sauté until translucent, about 3 minutes. Add the minced garlic and cook for an additional minute until fragrant.
Mix in the sun-dried tomatoes and stir for a minute. Then add the fresh spinach leaves, allowing them to wilt for about 2-3 minutes.
Pour in the heavy cream and sprinkle Italian seasoning over the mixture. Stir well and let simmer for 5 minutes until thickened slightly.
Return the sautéed chicken to the skillet, spooning some creamy sauce over the top. Simmer for an additional 5 minutes to meld flavors.
