2 cups of uncooked jasmine or basmati rice
1 pound boneless, skinless chicken thighs or breasts
1 large onion, thinly sliced
2 cloves garlic, minced
2 cups chicken broth (low sodium preferred)
1 cup heavy cream or coconut cream for a dairy-free option
2 tablespoons olive oil
1 teaspoon dried thyme or herbs de Provence
Salt and pepper to taste
Chopped parsley for garnish
Instructions
Begin by gathering all of your ingredients. It’s always helpful to measure and chop everything beforehand; this will make the cooking process smoother and more enjoyable!
In a large pot or deep skillet, heat the olive oil over medium heat. Season the chicken with salt and pepper. Cook the chicken for about 6-7 minutes per side or until browned and cooked through. Remove the chicken from the pot and set aside.
In the same pot, add the sliced onions and cook until they are soft and golden, about 8-10 minutes. Add the minced garlic and cook for an additional minute, stirring frequently to prevent burning.
Stir in the rice, ensuring it gets coated in the oil and onions. Pour in the chicken broth, scraping up any browned bits from the bottom of the pot.
Return the cooked chicken to the pot, adding in the dried thyme. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 20-25 minutes, or until the rice is tender and has absorbed the liquid.
Once the rice is cooked, stir in the heavy cream (or coconut cream). Let it simmer for an additional 5 minutes. Adjust the seasoning with salt and pepper as needed.
