  • Instructions

  • Begin by gathering all of your ingredients. It’s always helpful to measure and chop everything beforehand; this will make the cooking process smoother and more enjoyable!
  • In a large pot or deep skillet, heat the olive oil over medium heat. Season the chicken with salt and pepper. Cook the chicken for about 6-7 minutes per side or until browned and cooked through. Remove the chicken from the pot and set aside.
  • In the same pot, add the sliced onions and cook until they are soft and golden, about 8-10 minutes. Add the minced garlic and cook for an additional minute, stirring frequently to prevent burning.
  • Stir in the rice, ensuring it gets coated in the oil and onions. Pour in the chicken broth, scraping up any browned bits from the bottom of the pot.
  • Return the cooked chicken to the pot, adding in the dried thyme. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 20-25 minutes, or until the rice is tender and has absorbed the liquid.
  • Once the rice is cooked, stir in the heavy cream (or coconut cream). Let it simmer for an additional 5 minutes. Adjust the seasoning with salt and pepper as needed.
