  • 4 boneless, skinless chicken breasts
  • 2 tablespoons of olive oil
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 2 tablespoons of paprika
  • 1 cup of chicken broth
  • 1 cup of heavy cream
  • 1 cup of fresh spinach
  • Salt and pepper to taste
  • Fresh parsley for garnish

  • Instructions

  • Pat chicken breasts dry with paper towels and season both sides with salt and pepper.
  • In a large skillet, heat olive oil over medium-high heat. Sear chicken for 5-6 minutes on each side until golden brown.
  • Remove chicken from skillet and set aside. Reduce heat to medium, add onions, and sauté until soft. Add garlic and paprika and bloom for 1 minute.
  • Pour in the chicken broth, scrape the bottom of the skillet, and allow to simmer for 3-4 minutes. Add heavy cream and mix well.
  • Return cooked chicken to the skillet and simmer for an additional 5 minutes.
  • If using, stir in fresh spinach until wilted.
  • Plate the chicken, spoon extra sauce over the top, and garnish with parsley. Serve immediately.
