  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 4 cups chicken broth (or a vegetarian alternative)
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup ditalini pasta (or substitute with any small pasta)
  • 2 cups baby spinach (or kale)
  • 1 cup heavy cream (or half-and-half)
  • 1 cup freshly grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

  • Instructions

  • In a large pot over medium heat, add the Italian sausage. Cook for about 5-7 minutes until browned.
  • Once the sausage is browned, add chopped onion and minced garlic. Sauté for another 3-4 minutes until translucent.
  • Add chicken broth, cannellini beans, and diced tomatoes. Simmer for about 10 minutes.
  • Stir in ditalini pasta and cook for 8-10 minutes until al dente.
  • Add baby spinach and heavy cream. Cook for another 2-3 minutes, stir in Parmesan cheese.
