Ingredients
Scale
1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
4 medium potatoes, diced (Yukon Gold or red potatoes work beautifully)
1 cup ranch dressing (homemade or store-bought)
1 cup heavy cream
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
Salt and pepper to taste
2 tablespoons olive oil (or butter)
Fresh parsley for garnish
Instructions
Start by washing and peeling your potatoes. Dice them into uniform pieces for even cooking. While you're at it, chop the chicken breasts into bite-sized cubes.
In a large skillet, heat the olive oil over medium heat. Once hot, add the diced potatoes, season with a pinch of salt and pepper, and sauté them for about 10 minutes, stirring occasionally, until they’re golden and tender.
Once the potatoes are nicely browned, push them to one side of the skillet. Add the chicken pieces in the empty space, season with garlic powder, onion powder, and paprika, and cook for 5-7 minutes or until the chicken is no longer pink.
Lower the heat slightly and pour in the ranch dressing and heavy cream. Stir everything together, ensuring the potatoes and chicken are well-coated. Simmer for about 5 minutes.
Before serving, taste and adjust the seasoning. A sprinkle of fresh parsley adds flavor and color.
