1 lb boneless, skinless chicken breasts, diced
1 cup long-grain white rice
1 packet ranch seasoning mix
2 cups chicken broth
1 cup heavy cream or Greek yogurt for a lighter option
1 cup frozen peas and carrots
2 tablespoons olive oil
Salt and pepper to taste
Fresh parsley, chopped for garnish
Instructions
In a large skillet over medium heat, heat the olive oil. Add the diced chicken and season with salt and pepper. Cook for about 5-7 minutes or until the chicken is golden brown and cooked through.
