Ingredients

  • 8 oz. of penne or bowtie pasta
  • 1 lb. shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 1/2 cup of heavy cream
  • 1/4 cup of white wine
  • 1/4 cup of grated Parmesan cheese
  • 2 tablespoons of unsalted butter
  • 1 tablespoon of olive oil
  • 1 teaspoon of red pepper flakes
  • Salt and pepper to taste
  • Fresh parsley for garnish

  • Instructions

  • Cook the pasta according to package instructions until al dente. Reserve about 1/2 cup of pasta water.
  • In a large skillet over medium heat, melt olive oil and butter, add minced garlic, and sauté until fragrant. Add shrimp and cook until pink and opaque.
  • Pour in white wine to reduce for about two minutes, then add heavy cream and reserved pasta water. Simmer until the sauce thickens.
  • Combine cooked pasta with the sauce and Parmesan cheese until well coated.
  • Preheat oven to 375°F (190°C). Grease a muffin tin and spoon the shrimp scampi mixture into each cup.
  • Bake for 10-12 minutes until golden and bubbling. Let cool for a few minutes before serving.
  • Garnish with fresh parsley and serve warm.
