  • 4 salmon fillets (about 6 ounces each)
  • 2 tablespoons of olive oil
  • 1 cup of cherry tomatoes, halved
  • 1 teaspoon of minced garlic
  • 1 cup of fresh spinach, roughly chopped
  • 1 cup of heavy cream (substitute with coconut milk for dairy-free)
  • ½ cup of grated Parmesan cheese (substitute with nutritional yeast for vegan)
  • Salt and pepper to taste
  • 1 teaspoon of Italian seasoning
  • Fresh basil for garnish (optional)

  • Instructions

  • Heat olive oil in a large skillet over medium-high heat. Season the salmon fillets with salt, pepper, and Italian seasoning. Place the salmon skin-side down in the skillet and sear for 4-5 minutes on each side until golden brown.
  • Remove the salmon from the skillet. In the same skillet, add minced garlic and cherry tomatoes. Cook for 2-3 minutes until the tomatoes blister. Add spinach and cook until wilted, about 1 minute.
  • Decrease the heat to medium-low and pour in heavy cream. Stir and heat for 2 minutes until slightly thickened. Add Parmesan cheese and stir until melted. Adjust seasoning with salt and pepper.
  • Return salmon fillets to the skillet, spooning the creamy sauce over them. Cook for an additional 2 minutes until warmed through. Garnish with fresh basil before serving.
