Ingredients
Scale
- 1 pound ground beef (or turkey for a leaner option)
- 1 cup long-grain white rice
- 2 cups beef broth (or chicken broth for a lighter flavor)
- 1 medium onion, diced
- 1 bell pepper, diced (any color will do)
- 2 stalks of celery, diced
- 3 cloves garlic, minced
- 2 teaspoons Cajun seasoning
- 1 teaspoon salt (adjust to taste)
- 1 teaspoon black pepper
- 1/2 cup green onions, chopped (for garnish)
- Optional: 1/2 cup chopped green bell pepper or a diced jalapeño for spice
Instructions
- In a large skillet over medium heat, add the ground beef. Cook until it’s browned, breaking it apart with a spatula for about 5-7 minutes. Drain excess grease if necessary.
- Add the diced onion, bell pepper, celery, and minced garlic to the skillet. Sauté for about 5 minutes until the vegetables are softened and the onion is translucent.
- Stir in the Cajun seasoning, salt, and black pepper. Cook for an additional 2-3 minutes to meld flavors.
- Add the long-grain white rice and beef broth. Stir well to combine, ensuring even distribution.
- Bring the mixture to a boil, reduce heat to low, and cover the skillet. Let it simmer for 20-25 minutes until the rice is tender and has absorbed most of the broth.
- Remove from heat, let it sit covered for 5 minutes, fluff with a fork, and garnish with chopped green onions.
