Ingredients
Scale
2 cups all-purpose flour (or whole wheat flour for a healthier option)
1 packet of active dry yeast (2 1/4 teaspoons)
1 teaspoon sugar
3/4 cup warm water (about 110°F)
1 tablespoon olive oil (or melted butter for extra richness)
1 teaspoon salt
1 to 2 cups of assorted leftovers (think meats, vegetables, cheeses)
Herbs and spices (like garlic powder, red pepper flakes, or dried oregano) to taste
1 egg (for egg wash, optional)
Instructions
In a mixing bowl, combine warm water, sugar, and yeast. Let it sit for 5 minutes until it becomes frothy. Then mix in olive oil and salt, followed by the flour, one cup at a time, until a soft dough forms.
Turn the dough out onto a floured surface and knead it for about 5-7 minutes until it becomes smooth and elastic.
Place the kneaded dough in a greased bowl, cover with a damp cloth, and let it rise in a warm area for about 30 minutes or until it doubles in size.
While the dough is rising, gather your leftovers and chop them into bite-sized pieces. Toss them in a bowl with herbs and spices.
Once the dough has risen, punch it down, roll it out into a rectangle, layer your filling over the dough, and roll it tightly to form a log.
Preheat your oven to 375°F (190°C). Place the rolled bread on a greased baking sheet, brush with egg, and bake for 25 to 30 minutes until golden brown.
