1 lb chicken breast, cut into bite-sized pieces
3 tablespoons unsalted butter
4 cloves garlic, minced
1 cup long-grain rice (white or brown)
2 cups chicken broth
1 cup broccoli florets (or any vegetable of your choice)
1 teaspoon Italian seasoning
Salt and pepper to taste
Fresh parsley for garnish
Instructions
Heat 1 tablespoon of butter in a large skillet over medium-high heat. Add the chicken pieces, season with salt and pepper, and sauté for 6-7 minutes, or until golden brown and fully cooked.
Push the chicken to one side of the skillet. Add the remaining butter and minced garlic. Sauté for about 1 minute until fragrant.
Stir the rice into the skillet and let it toast for 1-2 minutes.
Pour in the chicken broth and add the Italian seasoning. Bring to a boil, then reduce the heat to low, cover and let simmer for about 15 minutes.
After 15 minutes, stir in the broccoli or your chosen vegetables, cover again, and steam for an additional 5 minutes.
Sprinkle freshly chopped parsley on top, stir, and serve.
