  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 cup long-grain rice (white or brown)
  • 2 cups chicken broth
  • 1 cup broccoli florets (or any vegetable of your choice)
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish

  • Instructions

  • Heat 1 tablespoon of butter in a large skillet over medium-high heat. Add the chicken pieces, season with salt and pepper, and sauté for 6-7 minutes, or until golden brown and fully cooked.
  • Push the chicken to one side of the skillet. Add the remaining butter and minced garlic. Sauté for about 1 minute until fragrant.
  • Stir the rice into the skillet and let it toast for 1-2 minutes.
  • Pour in the chicken broth and add the Italian seasoning. Bring to a boil, then reduce the heat to low, cover and let simmer for about 15 minutes.
  • After 15 minutes, stir in the broccoli or your chosen vegetables, cover again, and steam for an additional 5 minutes.
  • Sprinkle freshly chopped parsley on top, stir, and serve.
