  • 1 lb of large shrimp, peeled and deveined
  • 4 tablespoons of unsalted butter
  • 4 cloves of garlic, minced
  • 1/2 teaspoon of red pepper flakes
  • 1/4 cup of fresh parsley, chopped
  • 1 lemon, juiced and zested
  • Salt and pepper, to taste
  • 1/2 cup of chicken broth or vegetable broth
  • Parmesan cheese, grated for serving

  • Instructions

  • Boil water in a large pot and add salt and orzo pasta. Cook according to package instructions for 8-10 minutes until al dente, then drain and set aside.
  • In a large skillet over medium heat, melt 2 tablespoons of butter. Add the minced garlic and red pepper flakes, sautéing for 1 minute. Toss in shrimp and season with salt and pepper; cook for 2-3 minutes on each side until pink and opaque. Remove shrimp and set aside.
  • Pour the broth into the same skillet and bring to a simmer. Return the cooked orzo, stirring to combine for about 2 minutes. Add lemon juice and zest, and stir in remaining butter until melted.
  • Return shrimp to skillet, sprinkle with parsley, and toss. Adjust seasoning as desired and serve with grated Parmesan cheese.
