1 cup of orzo pasta
1 lb of large shrimp, peeled and deveined
4 tablespoons of unsalted butter
4 cloves of garlic, minced
1/2 teaspoon of red pepper flakes
1/4 cup of fresh parsley, chopped
1 lemon, juiced and zested
Salt and pepper, to taste
1/2 cup of chicken broth or vegetable broth
Parmesan cheese, grated for serving
Instructions
Boil water in a large pot and add salt and orzo pasta. Cook according to package instructions for 8-10 minutes until al dente, then drain and set aside.
In a large skillet over medium heat, melt 2 tablespoons of butter. Add the minced garlic and red pepper flakes, sautéing for 1 minute. Toss in shrimp and season with salt and pepper; cook for 2-3 minutes on each side until pink and opaque. Remove shrimp and set aside.
Pour the broth into the same skillet and bring to a simmer. Return the cooked orzo, stirring to combine for about 2 minutes. Add lemon juice and zest, and stir in remaining butter until melted.
Return shrimp to skillet, sprinkle with parsley, and toss. Adjust seasoning as desired and serve with grated Parmesan cheese.
