1 pound large shrimp, peeled and deveined
1 cup jasmine rice
3 cups chicken broth (or vegetable broth)
4 tablespoons butter
4 cloves garlic, minced
1 teaspoon paprika
1 teaspoon Italian seasoning
Salt and pepper to taste
Fresh parsley, chopped, for garnishing
Instructions
In a large skillet over medium heat, melt 2 tablespoons of butter. Add the minced garlic and sauté for 1-2 minutes until aromatic.
Add the shrimp to the skillet, followed by paprika, Italian seasoning, salt, and pepper. Cook shrimp for 2-3 minutes on each side until they turn pink and opaque. Remove shrimp and set aside.
In the same skillet, add remaining butter and jasmine rice. Stir for 1-2 minutes to coat rice with butter and garlic flavor.
Pour in the chicken broth, increase heat to high, and bring to a boil. Reduce heat to low, cover, and simmer for 18-20 minutes until rice is tender.
Once rice is cooked, return sautéed shrimp to the skillet and fold into the rice. Cook for an additional 2-3 minutes to heat through.
Garnish with freshly chopped parsley and serve hot.
