1 lb shrimp, peeled and deveined
2 cups jasmine rice
4 tablespoons unsalted butter
4–5 cloves garlic, minced
1/2 cup chicken broth
1/2 teaspoon red pepper flakes
Salt and pepper to taste
2 green onions, chopped
1 tablespoon lemon juice
Fresh parsley for garnish
Instructions
In a large skillet, melt 4 tablespoons of unsalted butter over medium heat. Add minced garlic and sauté for about 1 minute until fragrant, stirring constantly.
Carefully add the shrimp, seasoning with salt, pepper, and red pepper flakes. Cook until shrimp turn pink, about 2-3 minutes per side. Remove and set aside.
In the same skillet, add 2 cups of washed jasmine rice. Stir into the remaining garlic butter for about 2 minutes.
Pour in 1/2 cup of chicken broth and 1 cup of water. Stir well and bring to a boil. Reduce to a simmer, cover, and cook for about 15 minutes.
Once the rice is cooked, add the shrimp back along with the chopped green onions and lemon juice. Stir gently to combine and let everything warm through for another 2-3 minutes.
Garnish with fresh parsley before serving.
