  • 4 cloves garlic, minced

  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese
  • 1 cup baby spinach
  • 4 slices of sourdough bread
  • Butter for grilling

  • Instructions

  • Preheat your oven to 375°F (190°C). Rub the chicken breasts with olive oil, garlic, smoked paprika, salt, and pepper.
  • Place the marinated chicken breasts on a baking sheet lined with parchment paper. Roast in the oven for about 20-25 minutes until the internal temperature reaches 165°F (75°C).
  • While the chicken is roasting, heat olive oil in a skillet over medium heat. Sauté the baby spinach until wilted, about 3-4 minutes.
  • Once the chicken is done, let it rest for a few minutes before slicing it thinly. Layer the chicken on two slices of bread, add sautéed spinach, and sprinkle shredded mozzarella cheese. Top with remaining slices of bread.
  • Heat a skillet or panini press over medium heat. Butter the outer sides of the sandwich and grill for about 3-4 minutes on each side until golden brown and the cheese has melted.
  • Serve immediately, sliced in half.
