2 cups of cooked chicken breast, shredded
1 cup of Greek yogurt
1/2 cup of diced celery
1/2 cup of diced red onion
1/4 cup of chopped fresh dill
1 tablespoon of Dijon mustard
1 tablespoon of lemon juice
Salt and pepper to taste
Optional: 1/2 cup of diced apple or grapes
Optional: Mixed greens or whole grain bread for serving
Instructions
If using pre-cooked chicken, shred it into bite-sized pieces. If cooking chicken fresh, boil or grill the chicken until fully cooked, then allow it to cool before shredding.
In a large mixing bowl, combine the Greek yogurt, Dijon mustard, and lemon juice. Mix well until smooth.
Add the shredded chicken, diced celery, diced red onion, dill, and optional fruits into the bowl. Use a spatula to gently fold everything together until thoroughly combined.
Sprinkle salt and pepper to taste. Taste the salad and adjust seasoning and ingredients as desired.
Serve the chicken salad on a bed of mixed greens or in whole grain bread as a sandwich.
