Ingredients

  • 2 cups of cooked chicken breast, shredded
  • 1 cup of Greek yogurt
  • 1/2 cup of diced celery
  • 1/2 cup of diced red onion
  • 1/4 cup of chopped fresh dill
  • 1 tablespoon of Dijon mustard
  • 1 tablespoon of lemon juice
  • Salt and pepper to taste
  • Optional: 1/2 cup of diced apple or grapes
  • Optional: Mixed greens or whole grain bread for serving

  • Instructions

  • If using pre-cooked chicken, shred it into bite-sized pieces. If cooking chicken fresh, boil or grill the chicken until fully cooked, then allow it to cool before shredding.
  • In a large mixing bowl, combine the Greek yogurt, Dijon mustard, and lemon juice. Mix well until smooth.
  • Add the shredded chicken, diced celery, diced red onion, dill, and optional fruits into the bowl. Use a spatula to gently fold everything together until thoroughly combined.
  • Sprinkle salt and pepper to taste. Taste the salad and adjust seasoning and ingredients as desired.
  • Serve the chicken salad on a bed of mixed greens or in whole grain bread as a sandwich.
