Description
Delight in tender grilled chicken skewers marinated in a zesty lemon & herb blend. Perfect for your next BBQ or easy weeknight dinner!
Ingredients

1.5 lbs of boneless, skinless chicken breast, cut into 1-inch cubes
1/4 cup of extra virgin olive oil
Juice and zest of 2 lemons
3 cloves of garlic, minced
1 teaspoon of dried oregano (or 2 teaspoons fresh oregano)
1 teaspoon of dried thyme (or 2 teaspoons fresh thyme)
1 teaspoon of salt
1/2 teaspoon of black pepper, freshly ground
1/2 teaspoon of red pepper flakes (optional)
Wooden or metal skewers
Instructions
In a medium bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, salt, black pepper, and red pepper flakes.
Add the cubed chicken to the marinade, ensuring each piece is well-coated. Cover with plastic wrap and let it marinate in the refrigerator for at least 30 minutes or up to 2 hours.
If using wooden skewers, soak them in water for at least 20 minutes to prevent burning on the grill.
Preheat your grill to medium-high heat.
Thread the marinated chicken pieces onto the skewers, leaving space between each piece.
Place the skewers on the preheated grill and cook for about 15-20 minutes, turning occasionally, until the chicken is cooked through (internal temperature of 165°F).
Once cooked, remove the skewers from the grill and let them rest for a few minutes before serving.
