2 boneless, skinless chicken breasts
1 cup fresh pineapple, sliced
1–2 jalapeños, sliced
2 tablespoons olive oil
1 teaspoon smoked paprika
Salt and pepper, to taste
4 slices of your favorite bread (ciabatta or sourdough)
1 cup fresh spinach or arugula
½ cup mayonnaise
1 tablespoon lime juice
Instructions
Step 1: In a bowl, mix olive oil, smoked paprika, salt, and pepper to prepare the marinade.
Step 2: Coat the chicken breasts in the marinade, ensuring even coverage.
Step 3: Preheat the grill to medium-high heat.
Step 4: Grill the marinated chicken for about 6-7 minutes on each side, until the internal temperature reaches 165°F.
Step 5: After flipping the chicken, add the pineapple slices and jalapeño to the grill, cooking for 3-4 minutes on each side.
