Ingredients
Scale
1 pound ground turkey
2 tablespoons vegetable oil
1 cup broccoli florets
1 bell pepper (any color)
1 carrot, sliced
3 green onions, chopped
3 cloves garlic, minced
1 tablespoon ginger, minced
¼ cup soy sauce
2 tablespoons honey or maple syrup
1 tablespoon cornstarch mixed with 2 tablespoons water
Instructions
Start by washing and chopping all your vegetables. Prepping ahead can save time during cooking. Lay out the ground turkey, vegetables, and sauces so they are all within reach.
In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the ground turkey and season lightly with salt and pepper. Sauté for about 5-7 minutes until fully cooked, breaking it apart as it cooks.
Once the turkey is browned, toss in the broccoli, bell pepper, carrot, garlic, ginger, and green onions. Stir-fry everything together for another 5-6 minutes, or until the vegetables are tender yet crisp.
In a small bowl, whisk together soy sauce, honey, and cornstarch mixture. Pour this over the turkey and vegetables in the skillet. Stir well to combine. Allow it to simmer for about 2-3 minutes, letting the sauce thicken.
Once done, serve immediately over a bed of jasmine rice or quinoa. Garnish with additional green onions.
