1 pound of boneless, skinless chicken thighs
1 cup of pineapple chunks (fresh or canned)
1/4 cup of teriyaki sauce
2 tablespoons of soy sauce
1 tablespoon of ginger (minced)
1 tablespoon of garlic (minced)
8 to 10 slider buns (Hawaiian rolls recommended)
1 cup of coleslaw mix
1/2 cup of mayonnaise
Salt and pepper to taste
Instructions
In a large bowl, combine the chicken thighs, teriyaki sauce, soy sauce, minced ginger, and garlic. Allow the mixture to marinate for at least 30 minutes in the refrigerator.
Preheat your grill or a skillet over medium-high heat. Remove the chicken from the marinade, letting excess sauce drip off. Grill or sauté the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F.
While the chicken is cooking, grill or pan-sear the pineapple chunks for 3-4 minutes on each side until caramelized.
Once the chicken is cooked, let it rest for 5 minutes before slicing it into bite-sized pieces. Spread a thin layer of mayonnaise on the inside of the slider buns, then layer with chicken, grilled pineapple, and coleslaw.
Arrange your sliders on a platter, serve immediately, and enjoy!
