  • 1 pound of boneless, skinless chicken thighs
  • 1 cup of pineapple chunks (fresh or canned)
  • 1/4 cup of teriyaki sauce
  • 2 tablespoons of soy sauce
  • 1 tablespoon of ginger (minced)
  • 1 tablespoon of garlic (minced)
  • 8 to 10 slider buns (Hawaiian rolls recommended)
  • 1 cup of coleslaw mix
  • 1/2 cup of mayonnaise
  • Salt and pepper to taste

  • Instructions

  • In a large bowl, combine the chicken thighs, teriyaki sauce, soy sauce, minced ginger, and garlic. Allow the mixture to marinate for at least 30 minutes in the refrigerator.
  • Preheat your grill or a skillet over medium-high heat. Remove the chicken from the marinade, letting excess sauce drip off. Grill or sauté the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F.
  • While the chicken is cooking, grill or pan-sear the pineapple chunks for 3-4 minutes on each side until caramelized.
  • Once the chicken is cooked, let it rest for 5 minutes before slicing it into bite-sized pieces. Spread a thin layer of mayonnaise on the inside of the slider buns, then layer with chicken, grilled pineapple, and coleslaw.
