1 lb boneless, skinless chicken thighs or breasts
1 cup jasmine rice
1/4 cup honey
2 tablespoons soy sauce
4 cloves garlic, minced
1 tablespoon sesame oil
1/2 teaspoon black pepper
1 cup broccoli florets
1 tablespoon green onions, chopped
Sesame seeds, for garnish
Instructions
Rinse 1 cup of jasmine rice under cold water until the water runs clear. In a pot, combine the rinsed rice with 2 cups of water. Bring to boil, then reduce to low, cover, and simmer for about 15-18 minutes.
In a mixing bowl, combine 1/4 cup honey, 2 tablespoons soy sauce, minced garlic, and black pepper. Add the chicken and marinate for at least 10 minutes.
Heat 1 tablespoon of sesame oil in a skillet over medium-high heat. Add the marinated chicken and sear for about 5-7 minutes on each side until cooked through.
Remove the chicken and add broccoli florets to the skillet. Sauté for 3-4 minutes until tender-crisp.
Slice the chicken. In each bowl, place rice, sautéed broccoli, and sliced chicken. Drizzle with honey garlic sauce and garnish with green onions and sesame seeds.
