  • 1 lb boneless, skinless chicken thighs or breasts
  • 1 cup jasmine rice
  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 4 cloves garlic, minced
  • 1 tablespoon sesame oil
  • 1/2 teaspoon black pepper
  • 1 cup broccoli florets
  • 1 tablespoon green onions, chopped
  • Sesame seeds, for garnish

  • Instructions

  • Rinse 1 cup of jasmine rice under cold water until the water runs clear. In a pot, combine the rinsed rice with 2 cups of water. Bring to boil, then reduce to low, cover, and simmer for about 15-18 minutes.
  • In a mixing bowl, combine 1/4 cup honey, 2 tablespoons soy sauce, minced garlic, and black pepper. Add the chicken and marinate for at least 10 minutes.
  • Heat 1 tablespoon of sesame oil in a skillet over medium-high heat. Add the marinated chicken and sear for about 5-7 minutes on each side until cooked through.
  • Remove the chicken and add broccoli florets to the skillet. Sauté for 3-4 minutes until tender-crisp.
  • Slice the chicken. In each bowl, place rice, sautéed broccoli, and sliced chicken. Drizzle with honey garlic sauce and garnish with green onions and sesame seeds.
