1 lb large shrimp, peeled and deveined
3 tbsp honey (or agave syrup for a vegan option)
3 cloves garlic, minced
1 tbsp soy sauce (low sodium preferred)
2 cups watermelon, cubed (try cantaloupe as a substitute)
1 cup cucumber, thinly sliced
1/4 cup red onion, thinly sliced
1/4 cup fresh mint leaves, chopped (basil works too)
Juice of 1 lime
Salt and pepper to taste
Instructions
In a medium bowl, whisk together the honey, minced garlic, and soy sauce until well combined.
Add the shrimp to the marinade and ensure they are evenly coated. Let them marinate for at least 10 minutes while you chop the vegetables.
In a large bowl, combine the cubed watermelon, cucumber, red onion, and chopped mint. Squeeze lime juice over the salad and add a pinch of salt and pepper. Gently toss the mixture to combine.
Heat a large skillet over medium-high heat. Once hot, add the marinated shrimp to the skillet in a single layer. Cook for about 2-3 minutes per side until they are pink and opaque.
