  • 1 lb large shrimp, peeled and deveined
  • 3 tbsp honey (or agave syrup for a vegan option)
  • 3 cloves garlic, minced
  • 1 tbsp soy sauce (low sodium preferred)
  • 2 cups watermelon, cubed (try cantaloupe as a substitute)
  • 1 cup cucumber, thinly sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh mint leaves, chopped (basil works too)
  • Juice of 1 lime
  • Salt and pepper to taste

  • Instructions

  • In a medium bowl, whisk together the honey, minced garlic, and soy sauce until well combined.
  • Add the shrimp to the marinade and ensure they are evenly coated. Let them marinate for at least 10 minutes while you chop the vegetables.
  • In a large bowl, combine the cubed watermelon, cucumber, red onion, and chopped mint. Squeeze lime juice over the salad and add a pinch of salt and pepper. Gently toss the mixture to combine.
  • Heat a large skillet over medium-high heat. Once hot, add the marinated shrimp to the skillet in a single layer. Cook for about 2-3 minutes per side until they are pink and opaque.
  • Once the shrimp are cooked, remove them from the skillet and place them on top of the watermelon salad. Drizzle any remaining marinade over the dish.
