Indulge in the ultimate flavor explosion with this dreamy Loaded Ranch Potato Salad packed with creamy dressing savory toppings for a perfect side
Ingredients
Scale
2 pounds baby potatoes, halved or quartered
1 cup ranch dressing (store-bought or homemade)
1 cup shredded cheddar cheese
1/2 cup crispy bacon bits (you can use turkey bacon as a healthier alternative)
1/4 cup sliced green onions
1/4 cup diced red bell pepper (for a pop of color)
1 cup diced cucumber (adds a refreshing crunch)
Salt and pepper to taste
Instructions
Begin by placing the halved or quartered baby potatoes in a large pot of salted water. Bring the water to a boil, then reduce the heat and let the potatoes simmer for about 15 minutes, or until they are fork-tender.
Once the potatoes are cooked, drain them thoroughly and let them cool in a large mixing bowl.
After the potatoes have cooled, pour in the ranch dressing. Gently fold it in until the potatoes are evenly coated.
Add the cheddar cheese, crispy bacon bits, green onions, red bell pepper, and cucumber. Lift and fold them into the potato mixture gently.
Before serving, taste your salad, and season it with salt and pepper as desired.
For the best flavor, cover and chill the salad in the refrigerator for at least 30 minutes before serving.
