4 ounces of dark chocolate (70% cocoa recommended)
½ cup (1 stick) of unsalted butter
2 tablespoons of matcha green tea powder
2 large eggs
2 egg yolks
½ cup of granulated sugar
1 teaspoon of vanilla extract
¼ cup of all-purpose flour
Salt (a pinch)
Instructions
Preheat your oven to 425°F (220°C).
Grease four 4-ounce ramekins generously with butter and dust with a little flour.
In a microwave-safe bowl, combine the dark chocolate and butter. Heat in 30-second intervals, stirring in between until melted and smooth. Let cool slightly.
In a separate bowl, whisk together the eggs, egg yolks, sugar, and vanilla extract until pale and fluffy.
Pour the chocolate mixture into the egg mixture and stir gently until well combined.
Sift in matcha powder and flour, along with a pinch of salt. Mix until just combined.
Evenly distribute the batter into the prepared ramekins, filling each about ¾ full.
Bake in the preheated oven for 12-15 minutes.
Let the cakes cool for about 10 minutes, then carefully run a knife around the edges and invert onto a plate.
